Is there any way Windows 8 can read a drive with a GUID partition table?

Yes, it just needs to be formatted (on the Mac) with ExFAT or FAT32. This is how Boot Camp Assistant works. All it does is set aside a part of your HDD formatted under ExFAT so you can install Windows.
