I've tryed lots of video converters to do so. They are fast and convenient, but all poor in quality. Even some are "record while playback", terrible! So far, Quicktime Pro is the best converter i've ever seen. So I think the best quality way is to give loseless materials to Quicktime and then convert. This is how i do it (the time is estimated to rip a 5 min lenght video):
Step 1 (5 min): Open DVD Region+CSS Free (shareware, http://www.dvdidle.com/ ) to deal with copy protected DVDs. Then use Nero Recode (shareware, http://www.nero.com ) to extract the particular clip. The output file is also VOB format, so this step is loseless.
Step 2 (1 min): Use MPEG Streamclip (freeware, http://www.alfanet.it/squared5 ) to demux the audio to aiff format. Loseless, again.
Step 3 (30 min): Quicktime Pro + MPEG-2 Playback Component ( http://www.apple.com/quicktime ) will be used in this step. Open the loseless .vob video in Quicktime and add the loseless audio to the video, then export to iPod compatible video.
DVD Region+CSS Free and Nero Recode have 30 days full trial and that's enough to rip all you want.
For Macintosh users: DVD Region+CSS Free and Nero Recode are Windows only, but i'm sure there must be some equivalent tools on Macintosh. PS: the time used in step 3 will be shorter on Macs.
