I know that I've got a lot of vids to format, but I don't know which. Would it work to remove all of my movies (that were not purchased from iTMS) from the iTunes library, but keep the files, convert them to iPod format, and get on with life?
By the way, I LOVE MY NEW (FOR ME) REFURB WHITE 30GB 5G!

I'm not really understanding why you want to reformat the ones you bought via iTunes. I use Handbrake to convert my videos to MPEG-4.

you dont need to remove them, just convert the ones already in there

iSquint does a good job with movie files (not Video_TS folders)

Seconded.
iSquint will probably do the trick.
