Anyone know anything about the possibility of playing any PC based flightsims on the mac now boot camp has arrived, I would love to play IL2, microsoft Combat Simulator e.t.c, but am not sure if a joystick would be supported propperly ruinng in bootcamp?
Anyone tried this, if so how well do they run and how playable are they?

Your Mac is a PC. They'll all run fine.
Two flightsims I fully recommend are LOMAC for modern air combat and Xplane for cimpletely realistic civilian/military flight simulation. Xplane is the single flightsim under $50,000 or so to be certified by the FAA as an accurate simulation good enough to train pilots with.

IL2 rules in my book, nothing like flying accurate models of a WWII planes, with real weapons plus you can set the realism in flying the plane. Il2 and Pacific Fighters are both great.
