When do the new episodes of TV Shows show up on iTunes?

My tivo took a crap tonight and I am having a heart attack here, lol. I missed Survivor and Greys Anatomy. Luckily, iTunes has my back. But, when do they actually post the new episodes?? I was looking forward to watching these shows all day... 😱 🙁
