Currently I'm using iPhoto just to keep my photos organised and in place and I have one problem.

I use a Dynax (Maxxum) 7 which can store info about the photo such as time, exposure etc.

The photos are scanned in but they do not hold any info, so can I manually input the info into the photos are what?

All up in your bidness
What you need to do is edit the EXIF information in the image files. I know that the command-line program "jhead" can do this, but I'm not familiar with anything else. Maybe search VersionTracker for "exif"?
