If so, can you sync it with the mac at all? Also, what do you think of it so far?

p800 is supported in 10.2.5. this means it cooperates with addressbook, etc. however, isync does not support p800 yet!

I am pretty new to mac, so what does cooperates with addressbook, etc.. mean? If you can't sync with isync, what software do you use? Does it come with the P800? Thanks!

The P800 is today supported by address book (someone calls, address book notifies you on the screen, you will have options to send the caller to your voicemail or send him an sms). Also, file transfer between the phone and the mac is functioning (also before 10.2.5).
For iSync however, it's a different story. The technology for local synchronisation, used by iSync is irMc. This works fine with the older Ericsson phones (t68, R520, T39, etc.), but for the newest phones (not only SE, but also Nokia, Siemens, etc.) SyncML is increasingly becoming the standard, also for local synchronisation.
It is believed that Apple is working on integrating this into iSync, but it is not there yet. As a result, you cannot sync your Mac with your SyncML device today.
Guess we'll just have to wait a little more.
