We use the iPod for soundtracks when we sing. When I import them to iTunes, how do I set it for the highest quality? Not sure what the highest quality available is.

iTunes > Preferences > Advanced > Importing (tab). Then there is an "Import Using" pop up. If you want CD quality, choose Apple Lossless Encoder - but the files will be pretty big.
