How can I change to 256 colors on OS X?

I've got an old game that requires 256 color mode, but my computer won't go that low. How can I fix this?
 
Go to system prefs (I assume OS X), then displays but before you try to change the colours untick "Show modes recommended by display", and that should solve your problem.
