VLC is good, but it's network buffer is non-existent, from what I can tell.
Watching videos over WiFi has been a pain, so I use MPlayer OS X for those things.
Out of curiosity, why do you need one "all inclusive" player? I like using iTunes for music, and a combination of QuickTime, VLC and MPlayer for video etc. Not a criticism, just wondering. Is like convenience, creating a library/play lists?

Maybe not the best term, but I assumed Ike meant the most compatible player. VLC is as good as it gets. QuickTime+Perian+Flip4Mac isn't bad either, especially since you can then view the videos in browsers, Finder previews, and FrontRow.
Like I said, I have only had AC-3 audio issues, which did annoy me.
But if you don't run into these problems (or rather: incompatibilty) then Perian is the easiest way. 🙂
But if you do run into the same issues, then get this codec.
