And if so, how would I go about getting a MBP-C2D refurb with the Education discount? Thanks for any and all help!

Sorry to say that educational discounts do not apply when buying a refurb. Refurbs are already discounted so they do not allow an educational discount on these machines.

"When" the MBP-C2D refurbs appear, what is the typical discount and is it worth it compared to the $200 ed. discount on new?

It's difficult to say. You usually get great saving from the Refurb Store when you're buying products that apple no longer sells as new. For example, on the Australian Apple Refurb (I live in Aussie) store there is a MBP that has 39% off the original cost price. Also with refurbs the chance of you getting a faulty machine is less, and there is also a chance of getting extras that weren't mentioned in the product description, e.g. More RAM, larger HDD.
Hope that answers your question.

Check the org. pricing on the machine next to the discount pricing. They usually give you a % of savings.
