Sharing ONLY specific folders to SPECIFIC networked Mac users

Let's say I have a folder ("Want-to-share-folder") on Mac-A, not the Public Folder, and I want to share it with Joe on Mac-B.

I know that I can share a folder so that anyone can access it, but my goal is to only share ("Want-to-share-folder"), and only with Joe on Mac-B.

This is something that is simple to do on Windows, so I can't imagine that this can't be done on the Mac, but it's not obvious how to do so.

Anyone know how?

We can get into why the way Windows does it really isn't a great idea, but....

Whether or not it should be in OS X the way you want it or not, you might try SharePoints (http://www.hornware.com/sharepoints/). It should make what you want very easy.
