I have a 2.5 ghz dual core G5 with a 500GB western digital caviar HD. If I install a second one will I exceed the maximum amount of disk space the computer can hold?

I can't say for sure but it would be pretty stupid to limit a computer to less than 1 TB of HD storage these days.

My guess is that any computer made in the last 5 years is capable of handling at least up to 4 terabytes or more of HD space.
