I have some little videos from my camera. How do I get them out of the Movies sub-category of Videos?

you could have them in a playlist. just make it like any other playlist in itunes and when you click video playlists, it will show up on ur ipod
That has the problem I have with playlists - putting something in a playlist doesn't take them out of the general category.
