ok, with extraction, compression, and the actual burning in mind, what programs are the best, in an easy to use kinda way?

Well I don't know of a program that does all that but I do know separate programs.
Extraction: MacTheRipper (http://www.versiontracker.com/dyn/moreinfo/macosx/22715) and Handbrake (http://handbrake.m0k.org/?page_id=8) both FREE
Burning: Toast (http://www.roxio.com/enu/products/toast/titanium/overview2.html) and Popcorn (http://www.roxio.com/enu/products/popcorn/standard/overview.html) both cost money.

I use MacTheRipper to extract, then Popcorn to compress and burn.
