Instead of typing a link into a post like this:
http://www.zombo.com
How could I link a specific word(s) to a web page without the actual URL visable in the text of the post?

without the spaces in the brackets.

You could also post the text you want to appear first, like, "Linky (http://forums.macrumors.com/showthread.php?t=311202)."
Copy the full URL, then highlight the word and click the little insert link icon: http://images.macrumors.com/vb/images/editor/createlink.gif and paste the URL in the field. :)

Another stupid question:
What"s with the brackets ("[" and "]") though? The HTML I have been learing is using the "<" and ">" symbols.

This isn't HTML it's vB code.
