How can I connect my MBP to a Sony HDTV (HDMI) and keep the quality at it's best?

Does the TV have DVI input? If so, that's the highest quality output you can get from the MacBook Pro.

If it only has HDMI, I'm sure you can get a DVI to HDMI cable at Best Buy.
 
It has, VGA, HDMI, components and S Video.

You could go VGA, if you plan to use the HDMI for a component that actually uses HDMI for audio/video.

Of that list, from lowest to highest quality:

S-Video, Component, VGA, HDMI.

VGA would require a VGA cable as well as a DVI to VGA adapter. This wouldn't be as high of quality as DVI or HDMI, but it would probably work fine.
 
I use a DVI-HDMI for going to my 50" plasma. The quality is excellent and I got a cheap cable from CDW that does the job perfectly. (16' for under $30)
