I have had my MBP for a week now and it bothers me that the LCD screen light turns off so fast. How can I set it to stay lite for a little longer then it currently is thanks.

Under System Preferences > Energy Saver (you may have to hit 'Show Details').

Actually it is still happening. Say I leave the computer idle for 1 min the screen goes dim not off. Is there a way I can keep lite bright for at least 3-5 mins?

Yes, go to the same preference pane as above, but choose the 'options' tab this time.
Then, uncheck "Automatically reduce the brightness of the display before display sleep."

Not sure on this, but if you go to your battery menu on the upper right and select "better performance" (or something like that) does that help?

In this case, no. Those options for the battery settings only affect the display sleep and system sleep times.
