I am new to Apple Macs and would like to buy something like a Mac Book Pro and note in the Mac Buyers Guide that they have been upgraded. Would this mean that the older models in stock will be reduced and if so where would one go to get one?

Take a look at the Refurbs on the Apple Store @ Store.Apple.com

www.lowendmac.com has a good deals section that they update weekly. Not that any MBP is low end. :-) Right now it seems like Apple has the refurb market locked up though and you'l find the best deals at their store.
FYI I just bought a 15.4" 2.16ghz CD MBP 1GB/SD/100GB/256MB VRAM/AE/BT/iSight from Apple for $1424. That model MBP was released on 5/2006 and cost $2499 new. I'm pretty happy with the deal. I'll max the RAM, get Applecare, and then late next year I'll likely sell it on CL and upgrade to a refurb Penryn.
Waiting for an update and then getting the older models cheap is a great strategy, and you totally avoid the "new model" hiccups that happen sometimes.
