my girlfriend needs anew comp and she loves the iLife software, and is looking at the Mini. She does basic photo and video editing and simple graphic games, as well as internet stuff. Basicly, would a basic Mac Mini be enough for that? she has a 160 GB external HD, so space isnt an issue. Any advice would be much appreciated

Slap a GB of RAM in that and iLife flies. The Mini is more than adequate.

It is pretty easy with a putty knife once you get over the fear of breaking something. It took me about 5 minutes to do it and I was taking my time.

Even a PPC Mac mini would be fine for what she wants to do, and an Intel Mini would be more than enough.
