I have a few Intel Macs that I use, and was wondering if it would be possible to simply use a single external boot drive with multiple intel macs. Has anyone done this successfully, and are there any problems associated with this technique?

You can installed OS X onto an external drive. You just need to make sure the version on it is newer then what shipped with the Intel Mac.
 
What about driver issues? Let's say you do the install on an Intel iMac then boot it using an Intel Macbook Pro?

I build my Intel OS X build on a Mac mini with 10.4.7. It's currently at 10.4.10 and works just fine on my Mac Pros as well. (They shipped with 10.4.9)

You just need to make sure your external boot version is newer then the version that shipped with your Mac. I suggest using your Santa Rosa laptop as the installer and then update it to the latest version.
