Change App Names: Phone to Address Book

Hello I have been searching all over the web and have not been able to find a way to change the name of the Phone app to Address Book. I have switched out the icon to the Address Book icon but can't find how to switch out the name. I use my iPhone as a Pocket Macintosh with no service so this would be a nice change.

If anyone can help me do this it would be greatly appreciated.

P.S. I use installer.app and I change items in the iPhone via SFTP through Yummy.
