I may have stumbled into a very minor, thought cool software addition to the iPod touch that wasn't in the old OS.
Let me start by saying I can be picky about my album art. EVERY album in my library has art and for my absolute favourite stuff, I have a second image (usually the cover of the CD single). These "second" images are attached to the song just like the album art, but if you get info on the track it shows up as the second image on the cover art tab. You can also see this by clicking the right and left arrows in the little cover art box in iTunes.
Ok, so I was just listening to an album on my iPod touch and it got to the first single on the album, and the cover art displaying changed (by itself) to what I have set as the second image (the CD single cover art).
Neat. AFAIK iPod has never paid attention to cover art beyond the first image.
