I just bought a 2 GB Stick of RAM from Newegg for my 2.33 MBP. So I will need to take out one of my 1GB Sticks. Is there anyplace that I could easily sell this to cover some of the cost. I am sure I could try eBay or something, but would rather look into someplace a bit easier at first.

you could try craigslist or LowEndMacs google group, I have had luck on both. Or get 100 posts and sell it here on the Marketplace(just make sure they are good posts:))

Considering you don't have enough posts sell here, I'd say eBay or Craigslist would be the easiest.

ebay, or if you had more time here you could sell in the market place. Right now I think ebay, or craigslist is your best options.

Are there any online stores I could just sell them to?
How much should I ask for on ebay if I can't find a store to sell them to?

Sell them via craigslist.com
For something like this, its perfect. You'll find a local buyer who you can meet up with, and you and the buyer will avoid any shipping/handling, as well as an eBay/PayPal service fee.
I've bought and sold many things on craigslist - its great.
