You need the 1.1.1 versions of the apps, as well as (for Maps) a copy of the GMM.frameworks and (for Mail) the MobileMailSettings.bundle. So you'll have to find a copy of the iPhone 1.1.1 file system.

You need the 1.1.1 version of Mail from the iPhone (the old one crashes at startup no matter what) and you need /System/Library/PreferenceBundles/MobileMailSettings.bundle from the iPhone. For Maps you need /System/Library/Frameworks/GMM.Framework from the iPhone. Someone here has a blog that has a link to all the apps and all the stuff you need all in one handy link, but that might be considered illegal activity here.
