My iPhone is unlocked using windows..now i need it to work on mac? will it work? or screw it up

It should work the same with mac or windows.

so there is no mac formatted and pc formatted iPhones like iPods?

and also

how can i make sure it never updates to 1.1.1 by mistake?

you can interchange. I sync with my mac at home and my piece of crap windows laptop for my work calendar all the time.
