I want to use an iMac to record music w/ Logic Pro using headphones, but I don't want to have to buy any external sound equipment sans a MIDI controller.

The iMac's headphone socket is actually a standard analog socket AND a digital audio output. You will need a 3.5mm optical to toslink converter though.

So to answer your question, if you use digital optical out as opposed to the standard analog headphone connector, you will have no audio quality issues.
 
The 1st post has me totally confused. You want to use headphones as a mic?

I think he is suggesting using the headphone jack as a audio source for inputting to another device.

If you can us the digital out it should be fine.
