I have used TextMate, which is a great editor, but its support for editing files remotely is non existent... and I'm currently using BBEdit at the moment and it has sufficient support, but it just feels too bulky and rough.
Any ideas?

TextMate works fine for me editing files remotely. If you use it with cyberduck, it's just:
CMD + K > edit with textmate
and then when you save your work in textmate CMD + S saves it directly to the remote server.
Or is there a level of complexity that I'm not understanding here??

Get Transmit (http://www.panic.com/), then you can edit pretty much any remote file in pretty much any remote app, including the outstanding TextMate.
It stores files in a temporary folder locally and every-time you hit save it uploads this file.
