ok, time machine takes care of the day to day backup of my work, music, photos, etc... but i would like an image of os x incase things go awry...

i know i could restore from the Time Machine but i've tried that and i don't like the way it does it, some things got changed around and reset and i want to revert to a more exact image...

i tried CCC, but i can't seem to access any options that allow me to exclude certain folders from the backup image (and i do need it to be an image as i don't have a whole free partition, plus i like it packaged up neatly)... the options dropdown next to the source is greyed out but i want to exclude a lot of my home folder like music and photos (as a more up to date backup will always be available on the TM) and also the Virtual Machines folder that VMware uses for example...

So... how do i create a backup disk image with specific folders excluded?
