Word Dictionary woes

I'm currently writing an essay in Word 2004 but it keeps defaulting the language back to English U.S. I have changed it under Tools - Language and from Word - Preferences. When I change it to UK English it lasts for about 2 minutes then goes back to U.S. Any suggestions?
 
When you changed it in Tools --> Language, did you just click "OK" or did you click "Default..." and confirm it for everything?
