I need to look into getting a journal entry software package that allows date/time/subject entries and that you can cut and paste images to.

MS Word is not an option.

Thanks,

may meet your needs. Its only $19.95 and iif you have a .mac account its free.
There's no reason why you have to actually publish it to web

i suggest trying to use macjournal (available from macupdate (http://www.macupdate.com/info.php/id/7759) )

it's a really nice journalling program, but i am not sure if it supports including images. i use it for writing blog entries when i don't have net access (i just post them later on)

Macjournal is great, and yes it does support images.

it's the best there is. cocoa's text system and automated plain-text backups in case of an emergency. it's a great way to organize topics for books and screenplays as well.
