going back in time & running apps

to open an application in Time machine

for example to go back in time & open a non-mac-native
email app - to search for a deleted email

that would be really useful?

I'm not sure if I've understood you correctly...

🙂 Apple have thought of this.

I was happily using iPhoto, and I accidentally clicked the Time Machine icon. Time machine kicked in, showing what my iPhoto library looked like way back into the past...

Just tried it in Mail and it works! Launch mail, then launch Time Machine. You'll be able to 'restore' your deleted emails.

yes it does work with mac mail

but not other mail programs

unfortunately it only works for mac programs only

Well, that's what you get.

If another company made Time Machine, you'd see it work with more applications.
