If you do not want your name to keep appearing in the upper corner of your 1.1.3 iPod touch, then you must not restore it to a previous backup file. When you install 1.1.3 and iTunes asks you if you want to set it up as a new device or sync to a backup, you must tell it "New Device" because the backup holds the string that changes your "iPod" to whatever you had when you were using a jailbroken iPod. It sucks, I had to do a restore and I had to rebuild my bookmarks and lost all my notes but, I didn't want my iPod to look like it was ever modified and that's the only way I figured I could do it.
