Whats a cheap easy way to record my game systems video/audio output?

The Canopus ADVC110 is what I use to capture Halo and other various video sources and it works great. It has S-video as well as composite and digital video with a FireWire out to your Mac or PC. It's around $200, but the quality is definitely worth it.

I second this. It has all the inputs you need, and has great quality. We use it to record video from an embedded computer system.
