This is a pretty significant change, removing the most vulnerable aspect of the iPhone/Touch. I feel much more comfortable knowing the device is no longer running as root. I wonder how the devices will deal with installation of the new SDK apps, though. Or will iTunes handle that? My Mac always wants a password to install apps. That probably would be a good idea for the iPhone as well. Otherwise there's little advantage to running outside of root, if any old app can get installed without a prompt. That's been one of the big problems with Windows systems.
