What does it mean if the EDGE icon disappears and a white box is in it's place? Is it that you lose the EDGE connection for a bit or is it something else?

It means you have lost an EDGE connection but are still connected to the GPRS network.

But you cannot use YouTube or Visual Voicemail on GPRS>
