How do you remove the preview of the "documents" folder when it is in the dock? For example, I have the documents folder in the dock and when I go over it a photo which I have in that folder is shown in the dock. Any way to not have that?

Right now, your Documents stack will show the previews of the files in the folder, however in Mac OS X 10.5.2 it is said that you will have the ability to display either by preview or by folder icon.
For the time being, you could add an "icon overlay" to your Documents stack.
