I once saw a preference option that allowed you to change label colour and rename them from "orange" "red", etc. I can't for the life of me find it now. Can anyone point me in the right spot?

You can't actually change the colours, however the name can be changed in Finder preferences.

I swear I changed the colours once a long time ago. It must've been an add-on app of some type. Thanks!
