Hi I'm New To This And I Followed The Bit About How To Down grade it By Clicking "Check For Update" while Holding Shift , this works and i select the
1.1.1 file and
It Extracts It Ok,
Then
Preparing ipod For Software Update
Then Is Suddenly Says
The Ipod " Ipod" could not be updated an Uknown error occured (1602)
Can Anyone Tell Me What I'm Doing Wrong Or Why It Is Doing This?

Please follow the following image:

Then try shift-click and select your firmware. It should work.

I had the same problem, I'm on a Mac but this is what worked for me:
I used iTunes 7.5.xxx on Windows. iTunes 7.6 and 1.1.1 i don't think are compatible for some.
So preferably find another computer without a big music library and put 7.5 (Google the download) on it and use it temporarily to downgrade to 1.1.1.
Then go depending on what you are planning on doing, jailbreak it (guide here somewhere) and then use the same computer to upgrade to 1.1.2.
Now you should be able to go to 7.6 and finish jailbreaking or whatever you want.
i had to downgrade to itunes 7.5 to get it to work.
also, i had to use iphuc, that method never worked for me.

I face similar problem too.
native v1.1.3 8G touch.
iTune shows different error codes, such as error 1, 5, 1604, 0XE8000025....
iPod can't restore, unknown error [code].
but ok to restore between v1.1.3 and v1.1.4. just no way to downgrade to v1.1.2 or v1.1.1 or v1.1.

What firmware are you currently using and what firmware are you trying to upgrade/downgrade to?
Also, it seems better to use the "Restore" button rather than the update button.

owngrade 1.1.3 Out Of The Box E-mail
If you do not like the new features of the 1.1.3, you can now downgrade (out of the box)1.1.3 iPhones. Follow teh below steps.
1. Get a fairly recent version of iPhuc
Click here: iPhuc
2. Locate your 1.1.1 ipod software bundle. On the Mac, this is in ~/Library/iTunes/(iPhone or iPod) Software Updates.
3. Extract the ipsw file Create a new folder and unzip the 1.1.1 .ipsw file. It is actually a renamed zip archive.
4. Locate the WTF file Inside the unzipped ipsw folder go down to Firmware > dfu and find the file that starts with WTF.
5. Connect your iPod or iPhone to the computer and launch iPhuc Make sure that iPhuc connects to your unit and has a normal prompt (one where you can issue the "ls" command and see the contents of your Media folder). If iTunes starts up, quit it.
6. Enter recovery Type enterrecovery, press return and quit iPhuc. Your unit should go into recovery mode.
7. Relaunch iPhuc. You should now see the recovery mode options. Enter filecopytophone followed by the path to the WTF file and press return. Then Enter cmd go and press return. Quit iPhuc.
8. Launch iTunes. It will complain that it has found an iPod or iPhone in recovery mode. Click OK. Then Option-Click (Mac) or Shift-Click (Windows) the Restore button.
9. Choose the 1.1.1 ipsw file Locate the ipsw file (not the unzipped folder) and select it and start your restore. The screen *should* go white. That's normal. If all is well and good, your iPhone or iPod touch will downgrade succesfully.
10. Dealing with error 1015 If you run into error 1015, connect your newly restored unit to INdependence or try issuing a cmd fsboot from iPhuc.
