Updating from 1.1.3 to 1.1.4

If i do this would it wipe out all my apps?

could i just copy and paste all my files to my PC via winSCP and then just transfer it back to the iphone after the restore/jb process?

It will brick your phone again. It will need to be unlocked again and your apps wont work. IFAIK

i'll just wait for the 2.0 firmware and update it then.

Remember to restore before updating to 2.0
If you don't, you'll get bricked.
