Hey, I know you cant do this normally on a iphone but is their a program to install that can do this? If so do i have to hack anything on my phone or do jailbreak? I would prefer not to

You can use iLog from http://iphone.ileks.com/iLog.htm (you'll need to add their repository to Installer). Once you've installed iLog then load it, tap on the Log button at the bottom and then edit and you should be able to delete individual calls etc. Not tried actually deleting one myself, I'm happy with what's in my call lists but it certainly seems to have the ability to.

Yes, you will need to jailbreak your iPhone. I kind of assumed you'd already done that when you said is their a program to install that can do this. If you're willing to give it a go then grab the Pwnage Tool (see one of the sticky threads at the top of the forum) and follow the tutorial (see the same thread as before). Jailbreaking your iPhone will mean that all the call history will be wiped anyway but you'll be prepared to erase calls etc. again in future.

If i jailbreak my phone can i restore it to the original settings if i dont want it anymore? Any downsides to jail break?

Read the FAQ/Tutorial on the Pwnage Tool (here and in others forums such as ModMyiFone). It is believed to be possible to completely re-virginise an iPhone after using Pwnage, the jury is still out on some of the more technical bits but as far as I can see/read it is possible to undo all the changes made by simply re-running the BootNeuter program (if you used it originally, it's optional and only necessary if you want to do certain things like unlocking for non-O2/other official provider's SIM cards) with the settings restored to the defaults and then installing a standard Apple iPhone firmware. As for downsides to Jailbreaking etc - it will likely invalidate your warranty if Apple detect that you've done it. That's about all I can think of...
As always, do it at your own risk, no liability will be held for damage sustained etc. etc.
I have Jailbroken 1.1.2 using one of the old downgrade, hack, upgrade routes and now using Pwnage - no side effects noticed.
