Ok...I kinda have an idea of what a "Keychain" is but not exactly sure technically what it's all about, so with that said, can anyone help and explain what a "Keychains" is and it's purpose? Thanks!

A keychain helps to keep all your keys together on a ring.

Sorry I couldn't resist

Actually the OSX keychain stores passwords if you click "Remember in Keychain". The keychain also stores stuff like iChat/AIM password, Network mount passwords, wireless network passwords, internet passwords, etc. (all under the assumption you check 'remember password', other wise you have to reenter the pass again)

What kind of security is slapped on this keychain? I have to imagine it has some heavy-duty encryption\security on it.

your Mac OS X login password is needed to access any of Keychained passwords...

if you left your computer open, other people will be able to use Keychained passwords, but they won't be able to know what those passwords are unless they know the login password for OS X.
