I have a Quad-Core 2.8GHz Mac Pro with 6GB RAM and the 320GB HD.

It's (obviously) a heck of a lot faster than the PC I was using before, but I still feel like there's room for improvement--especially with Photoshop--but I'm not sure how to go about it.

Any suggestions would be much appreciated.

Yeah I've seen that before. I was looking for more real-world ideas and things people are doing to their systems.

Unfortunately, our slow, almost-full servers may be causing much of the problem.

Maybe a better description of the problem or your network may help. The Adobe tech note is an excellent explanation of how Photoshop CS3 utilizes memory and how to adjust Photoshop settings to get the most out of your hardware and software.

"Problem" is probably the wrong word; it's less a problem than a hunch that it should be faster than it is.

The Adobe tech note is a good explanation, but I have read it on multiple occasions before and am now looking for settings other people are using, just to see different setups.

You have 6GB of RAM; set the PS memory slider to 100%.
Install a fast disk(WD Raptor, for example) or disk array(4 Raptors, for example) for scratch.

Mac Pro 2.66 quad, 12 gigs ram, 500 gig WD primary hd, 500 gig WD scratch disk, 1 tb Barracuda (internal)- Time Machine. Photoshop CS3 memory set to 100%.
