Upgrading to 8800GT

How far back is the 800GT upgrade compatible with older Mac Pros? Would it work in, say, an early '07 or even '06 model?

Wow, where have you been? There has been much discussion on this topic. The 8800GT just recently became available for the pre-2008 models. There is a different upgrade kit available.

What do you mean "'07 model"? There are only two Mac Pros, and only as of very recently do they each have their own 8800 GT.

Yeah they just released a 8800 kit for the first gen mac pro.

According to Apple there have only been 2 releases. The OP may have been confused since there was first the original mac pros, then the 8 core version came out, and then the current 08 model.

Apple released an 8800 GT compatible with pre-2008 Mac Pros late last month. Just make sure when you order it to pick the right one. ;)
