I carefully followed all the things it says but it refuses to talk to the gmail smtp service. It works fine on other machines on my network but not the touch.
Any one else encounter this ?

Yep, tried to set up my G-mail on my 1.1.4 and it can't do it either.
EDIT: It keeps on telling me "IMAP.googlemail.com is not responding". >3

Interesting...my Touch is about two weeks old and came with 1.1.4. I was able to set up gmail based on the instructions on Google and it's been working brilliantly ever since. I've used it today to send, so the gmail server isn't the apparent issue.
Good luck,
Steve

You have to go to Gmail on your computer and go to settings and turn ON imap. Then delete your gmail account info on your touch and re add it using the Gmail button

My settings on Touch (advanced):
Incoming:
Use SSL = ON
Authentication = Password
IMAP Path Prefix = / (must have been default)
Server Port = 993
Outgoing:
Use SSL = ON
Authentication = Password
Server Port = 587
Settings on gmail (Forwarding and POP/IMAP tab):
POP Download = POP is Disabled
IMAP Access = IMAP is Enabled
This is working for me...hope you figure it out.
