I have to use a very slow dial up internet connection, and really want to keep an eye on it while connected to the internet, I can see the internet status and sent / received
information by looking at System preferences > Network ..
and just leave this open on my desk top, is there any other way to see this information on my screen , with out having to keep the Network system preferences box open all the time,,?

Try the Activity Monitor:

Applications/Utilities/Activity Monitor

Or use a program called Menu Meter, which allows you to see CPU utilisation, Network Throughput and Memory Consumption in the Menu Bar:
