When I boot to 10.3 Disk Utility to format my drive there is a new opiton there.

Cool feature. Apparently it helps keep your directory in order by noting when a modification is requested, and then clearing the note when the change has been made. If you crash during a directory modification, the computer will be able to note that the change wasn't made if the note remains.

Yeah, journaling is very cool. The explanation above is right on. Aside from keeping your disk in good order, rebooting after a crash is very quick, since the filesystem doesn't need to be checked for consistency and errors. Also, you can turn journaling on or off at anytime in the Disk Utility application.
