Editing plist files

I have used iJailbreak on my iTouch I now want to edit a plist file, how do I do this ?

convert plist with http://140.124.181.188/~khchung/cgi-bin/plutil.cgi
from binary to ascii.
open converted plist with an editor, such as notepad, textedit, etc.

i just opened it up with notepad, edited it, and off i go
