is there a way to delete icons? like the stocks icon or the youtube icon ....etc

Hold your finger on one of the widgets, then when they wiggle I believe you can delete them by pressing the red X at the top left corner. I don't own a iPod Touch as of now, but I believe this was explained in the guided tour.

You can only add and delete WebClips. THe built in applications that you listed cannot be removed. They can, however, be moved to a 2nd page to be out of the way.

This will also apply to Apps when the 2.0 software comes out next week. Also, at least for a few icons, they can be turned off with parental controls as well with the software update.

Yup, 3rd party Apps will be able to be deleted. And once 2.0 comes out, you will be able to hide these Apps from visibility with Parental Controls (which has now been renamed Restrictions in the latest beta software build)

Explicit iPod songs (not accessible)
Safari (hidden)
YouTube (hidden)
iTunes (hidden)
App Store (hidden)

Maybe in the future they will add this functionality for all Apps.

Edit: Poof is an Installer.app application available for download after JailBreaking your iPod or iPhone, it adds the functionality to be able to hide any Application Icon off of the Home Screen
