There's also a chance for a release at 11pm PST, 10pm PST, etc. It'll come out when it comes out.

im just refering, like the standerd apple release times (9 am , 12 pm, 12 am)

They don't have standard update times. They come out whenever deemed ready to be released. Could be 2:07am for all anyone knows.

i don't think that the 2.0 update will be available until the iphone has been rolled out in ALL of the countries... which means since the US is the last major country from east to west, it may be available in the morning of the 11th, cupertino time... actually seems quite logical to me - FIRST new iphone customers, next existing users, last ipod touch users...
you get what you pay for... ESPECIALLY with apple.
